Perfect, easy and healthy crepes. No sugar, gluten free, eggles crepes recepie. This one is my favorite. Try it and enjoy this guilt free desert.
150 g buckwheat flour (untoasted, not kasha)
1 Tbsp Tapioca flour
1 tsp chia seeds
1 Tbsp flaxseed meal
1 tsp backing powder
400 ml dairy-free milk (such as oat, almond, rice..)
Pinch sea salt
1 tsp ceylon cinamon
Prepare the "eggs"- combine chia seeds and flaxseed meal with 2-3 Tbsp water, let it sit for 5-10 min.
In a mixing bowl combine buckwheat flour,tapioca flour,backing powder,salt, cinnamon, add milk and prepared eggs
Whisk in mixing bowl to combine. The batter should be pourable but not watery. If too thin, add a bit more buckwheat flour. If too thick, thin add some more dairy-free milk.
Heat a nonstick skillet over medium high heat.Once hot, add oil , add the batter, and swirl the batter around the pan so it forms a thin circle.
Let cook until the top appears bubbly and the edges are dry. Flip carefully and cook for 2-3 minutes more on the other side. Turn heat down if cooking too quickly.
Repeat until all crepes are prepared - about 10-12.
Serve as is or with a filling of your choice!
My favorit filings are homemade jams and hazelenut cream with raw cacao nibs.
