Although Im vegan some meals and tastes I do not want to give up. This is a healthy and vegan version of my favorite breakfast. One recipe two meals, only four basic ingredients.
200 grams firm tofu
1 cup oat milk ( optional: soy, rice...)
1 and 1/2 Tablespoon aru powder
2 Tablespoons rice flour
1 teaspoon turmeric
1 teaspoon Himalayan salt
1/3 teaspoon black salt (optional - for egg flour)
Remove tofu from package, drain all liquids, Place tofu on paper towels and remove excess liquid. Cut tofu into pieces. Place all ingredients in a blender,pulse until smooth. The batter should be like pancake batter. If its to runny add some more aru powder or rice flour.
Cut some bread slices to your desired thickness. Heat a non stick frying pan and add some oil. Dip the bread slices, both sides, letting it soak a bit in the batter. Place it into the hot pan and cook it until it gets a nice yellow brown crust, repeat on both sides.
Tofu scrambled eggs
Heat a non stick frying pan, add some oil, medium-high heat. Add the batter and cook until it gets a nice golden brown crust, in that time you can add some veggies - spinach, spring onion. Mash the tofu with a cooking spoon. Add a bit of black pepper and salt.
